Superbowl Sunday Snacks

This Superbowl Sunday was much different than Superbowls past. There was no cheese tray, no sausage balls, or cocktail weenies. We didn’t order a pizza or have chicken wings. We didn’t even drink soda (and haven’t for a month now!).

With this new healthy living lifestyle, we had to become a little bit creative on what snacks we could enjoy. What we realized, though, is that making healthy snack is really quite quick and easy! Here are the links to the recipes we made to enjoy the football game with.

Black Eyed Pea Pico de Gallo

Roasted Okra

Carob Chex Mix

Spicy Green Peas

Homemade Guacamole

Homemade Corn Tortilla Chips

Along with those links above, we put out a bowl of fresh grapes, pistachios and plenty of ice water to go around! What healthy vegan/vegetarian snacks did you prepare for the Superbowl?

    One of my favorite snacks is baked greenbean fries.

    So simple and so yummy.

    Fresh greenbeans..(I cut the tips off)
    1 tbs Olive oil
    fresh ground pepper
    a bit of sea salt

    Put all of your ingredients in a bowl and Shake to coat!
    Spread on cookie sheet..
    Roast 25-30 minutes flipping once…
    I like mine just a bit overdone…

    Yummy and easy!

    My new favorite snack is roasted walnuts and cauliflower. Simply coat with olive oil 2 cups (more or less) cauliflower with 1/4 cup (more or less) walnuts and a dash of salt. Roast until crisp. YUM :)
